Just a few years ago, in 2013, twenty local families got together and created the Saint Augustine Distillery with a single vision: To manufacture world-class spirits and leave St. Augustine better for future generations. The oldest ice plant in Florida was conserved, refurbished, and converted into the busiest craft distillery in the nation. The objective is simple: To teach guests how and why their spirits are truly different and welcome them to become lifetime customers and inspired ambassadors.

History of Saint Augustine Distillery and Standards

In the St. Augustine, FL area ice manufacture started in 1886. The 20,000 inhabitants of St. Augustine in the early 20th century utilized 125 tons of ice every day. Ice was required for shipping by farmers and shrimpers. The Ice Factory operated seven days a week, around the clock. 

The current building was originally constructed in 1907 as a component of St. Augustine's first power and ice complex. The Ice Factory was the first of its kind to produce commercial block ice in Florida over a century ago and is now included as a contributing building to the Lincolnville Neighborhood on the National Register of Historic Places. 

St. Augustine Distillery was founded in 2013. They are a family-run business that produces premium spirits using the region's agricultural products. Their distillers collaborate with farmers around the state to daily produce whiskey using local grains.

They don't get their whiskey from other sources or mix other sources with their bourbon. They distill and bottle everything they sell, ensuring the spirits are perfect before being placed in barrels and aged. Furthermore, they're dedicated to teaching their guests how to prepare the best cocktails with their spirits and what goes into each bottle, which is hand-bottled by actual people.

Touring and Tasting

At the Saint Augustine Distillery, you will see how spirits are created from farm to bottle on a free, self-guided tour. You will see the details of the various bourbons and finishing casks. However, the best part is that you'll taste and learn how to mix the distillery’s four trademark drinks and take everything you need home to wow your friends!
